L’Enclume in Cartmel has become only the seventh restaurant in the country to achieve five AA rosette status, and the only one north of Nottingham.
The restaurant has been running for eight years and has received a number of awards including Best UK Restaurant by Square Meal magazine.
Chef and proprietor Simon Rogan said: “It’s the ultimate grading. It’s as good as it gets. We are now in an elite group.
“We have had to cook consistently for the past four years. What sets us apart is that we focus on all things local; from meat to fish to shellfish, right across to the Barrow coast and Walney Island. It gives us a real identity.
“We are all thrilled to bits. All the staff have put in a tremendous amount of work and it’s paid off. They can now all say on their CVs that they have helped contribute to this success. It’s incredible.”
The restaurant joins Gordon Ramsey’s ‘Restaurant’, London, and Heston Blumenthal’s ‘The Fat Duck’, Bray, Berkshire, on the list of elite restaurants.
To achieve five rosettes, the restaurant must prove the cooking is ‘at the pinnacle of achievement. Flavours, combinations and textures (must) show a faultless sense of balance, giving each dish an extra dimension’.
Mr Rogan added: “Now we are looking forward to improving all the areas we need to improve. We can’t get a higher status, but I want to improve the areas I feel we can for our guests.”
